The Chalet at French Alpine Bistro was developed at the beginning of the pandemic as a solution to the pandemic. It has provided much needed 45 seats in the dining scene of Aspen and was created by local owner, Karin Derly.

Penultimate reasons to keep The Chalet:

  1. It has created 10 additional full-time employment opportunities for local people, enabling locals to continue to afford living in town (25% increase in employment at FAB).
  2. It has increased the dining options by 45 seats. Ten of which are held for local reservations, ensuring that locals can always come in, in smaller groups. Aspen lost 3 restaurants over this past season - reducing seating capacity by over 500 seats per night, per seating!
  3. Aesthetically speaking, The Chalet has been admired as a beautiful place to enjoy dining in as a safe and secure structure.
  4. People still want to be seated at a distance, and so The Chalet allows for this to be possible. The pandemic might be "over" but the public is even more aware of health concerns so people still want to be seated at a distance or upstairs. The Chalet allows for this to be possible.
