The six six is a vision, a dream and a reality that only exists due to the journey of its owners. It will be a beacon of hope that your past doesn't define you and that anything is possible with the love and support of your family, friends and your community.
The Six Six bar will be a brand new concept bar and waffle house in the heart of Hitchin town centre. With the ever-changing landscape of the high street and its offering, The Six Six aims to deliver more than this. The Six Six will be in keeping with Hertfordshire county councils goal to work with Local Enterprise Partnerships and Visit Herts in the provision of careers, tourism and enterprise in the Hertfordshire area to boost spending, create jobs, preserve local heritage and encourage future growth of Hertfordshire’s £2.1bn visitor economy , The six six can boost this idea providing a memorable hot spot for tourists and locals alike. It will create jobs and progression opportunities for its staff and it will be a shining example of what can be achieved in Hitchin with hard work and commitment to working with the town and its council.
With a wide range of artisan waffles and fresh roasted bean coffee the Six Six will become the perfect place to grab a meeting or catch up with friends. Alongside this the day trade will showcase custom made clothing designed by local artists with a % of sales going to them a % going to a local charity or cause and of course a % back into the business . The Six Six will be targeting an over 21s/ challenge 25 only approach in the evenings as the town has an abundance of social hot spots for the younger demographic.
Our aim isn't to reinvent the wheel, but a new hybrid establishment that will drive footfall in the high street, offers roasted coffee and delicious artisan waffles, custom clothing and gallery space for local artists and of course create a creative exciting place in the evenings and at weekends.
We need your support for this project , we need to show the local authority that this project will boost the high street trade, that this project is exactly what Hitchin prides itself on , forward thinking, progressive, pioneering ideas that light the way..

Day time Trade
“Coffee & Waffles”
To ensure we add to the high street but do impact the local coffee shops we intend to provide “American style” coffee. Simple Roasted bean, black coffee sourced locally. We will offer free refills with a selection of non-dairy based milk. The Six Six will operate as a waffle house with a whole range of flavors. This will be a truly unique offering for Hitchin with fresh fruits, Vegan Ice creams, Nuts and grains, and a range of sauces.
Creative meeting hubs
The Six six will have 3 custom made booths seating 6-8 people as part of the aesthetic. Each booth will be created to honour a music era or genre for example ( The Rock n Roll Booth, The Indie Booth, The Hip Hop Booth ) each booth will come with plug sockets and USB feeds for laptops and the building will offer free wifi.The Long term vision is to renovate some of the 2nd floor into meeting spaces for hire.
Local Artists
The Six Six will support local artists such as musicians by selling their product taking 0% of sales
We will also showcase local artists selling artwork and prints that we will then hang in our venue ready for purchase with, again, a 0% selling fee
Clothing
The Six Six will have custom made clothing that will be showcased by our staff and this will be on sale during the day. We plan to grow this by bringing in local artists to create the designs as it grows with a % of sales going to them a % going to a local charity or cause and of course a % back into the business
Evening Trade
The six six will be a truly unique space for Hitchin. A bar first and foremost. Great hospitality, great music, jukeboxes, and even a custom made photo booth.
The six six will not offer Live music as a standard offering as Hitchin already has an abundance of this. We will have DJs at weekends playing Rock, Indie, Motown, Soul, Hip Hop, Blues and country creating an eclectic mix for true fans of music and its incredible journey. We will also offer all local businesses and staff a Six Six locals card giving a pre-agreed discount off of food and selected drinks.
The six six will adhere to over 21s with a challenge 25 mentality

The Six-Six will fill a gap in the buzzing service industry that Hitchin offers. As a close and intimate community, I am sure that the cosy atmosphere with a unique and inviting menu alongside the aim to work closely with local artists is what will make this wonderful establishment so popular with local people. The owners are extraordinary people with a keen entrepreneurial talent, while simultaneously maintaining the humility and kindness from their humble background.
A great way to energise the music scene and culture of an awesome town that’s crying out for a new creative space like this.
I feel that this would be really good for the town. There isn’t a decent art place that doubles up as a venue, it would be good for local artists and musicians, and for a demographic of art lovers musics lovers of my age with money to go and meet up.
Knowing the intended proprietors, and working in the hospitality trade myself for many years, I am convinced this project will stand as a shining example of quality and individuality, and will fit in well with the existing landscape of Hitchin businesses.
Hitchin is well known for its bohemian chic and the Six Six will be the epitome of everything this wonderful community strives for - a grass roots business idea which will not only support the local economy but will do so in a truly unique way. We don’t need more chain stores, we need more originality, more magic and the Six Six shows real promise in achieving that. More than just a high street eaterie, this business also seizes the opportunity to send the elevator back down to the grass roots from which it came, ready for more home grown talent to emerge and take flight.
Hitchin needs this kind of venue!!!
