Why not just name the kid "Spyridon Michael Soukeras", and call him "Mike". No reason you can't compromise... Later, if the kid decides he likes the full name Spyridon, he can have people call him that, or some derivitive...

Spyridon isn't easy to pronounce. Having said that, honouring your family and that your wife is a beautiful thing to do. I would recommend Michael as a first name and Spyridon as a middle name

In a relationship everything cannot be onesided. Anyway Nocholas has agreed to name the child as per wife's wishes if its a girl or a second born. He must have a say atleast for the first born. Family tradition are wonderful to maintain.
