Update:

Dimitri explained that he never fired his parents. Seeing how his father's illness has taken a toll on both his parents, he wanted them to slow down and take a reduced role in the business. That conversation did not go down well, Francesca and Hans left, feeling that they were being fired.

I hope this small movement showed them how much we all care and hopefully Francesca, Hans and Dimitri work out a compromise for the happiness of everyone.

We, the loyal customers of St Ambroeus in Southampton, are asking for Francesca and Hans to be reinstated as managers.

It is unfair, after all their years of service, the love and caring they put in their work, their dedication towards impeccable service but most of all the very special relationships built over years with their loyal customers, that they should be let go so unceremoniously .

We cannot fathom a St Ambroeus Southampton without walking through the door and seeing Francesca and Hans behind the counter, running a business with a fist of steel and a heart of gold.

St Ambroeus Southampton is not the same without them and knowing that it was not their decision to leave, we would greatly appreciate their prompt return.

This petition and all the signatures gathered might help you understand the repercussions of this firing on our small community and we hope in all good faith that you will decide to do what is best for everyone.

I have opened a direct channel with the ownership group to present the concerns raised by the local customer base. We are awaiting a response regarding their plan to address the management transition with the community.

The food, the coffee, the quality of the service ...the gelatos at St Ambroeus are medicine for the soul. St Ambroeus is a must stop for us but all of this is only because of Mr and Mrs Paoli. Francesca and Hans set a style and standard which made the fame of St Ambroeus. Without them it would be a big downgrade. This would really affect our interest. But we trust you will reconsider your decision. Kindly

Except for a few exceptions Louis , Elizabeth and Anna the service is not the same. The feeling walking in to the place is missing the warmth andperfection that the Pauli's provided. , it was a unique, enjoyable experience when Francesca and Hans were in charge

We want Signora Pauli back - and of course Mr Pauli. Not only they 'are' St Ambroeus but they represent everything it stands for. They care in a special way about each product and the overall service. I think I am a fairly good client, someone who goes there two or three times every weekend, winter and summer. It's a long way from Sag Harbor and I see no reason to go without the Paulis in charge. Whoever took this lousy decision without even considering what us, the customers, may think should reconsider quickly and understand what's behind the St Ambroeus brand and why we care about Mr and Mrs Pauli. Wow , fired from the Business that they started , fired from a Business that they have polished to the highest of sparkle , fired from the place they went to rain and shine day in and day out , fired from a place that literally compromise their health ? Can't believe it , if that's the way they treat them as employees ( forget mom and dad ) I have no reason to ever set foot in a st Ambrose again. If you want me back , bring them back !! I am so appalled to hear this news and of course am signing the petition. Someone wrote the word "Matriarch" and that is the right term, for anyone who frequented Sant Ambroeus Southampton felt as though they were entering her home. She has ensured fabulousness in everything from the 1st birthday cake they did for my Katie 21 years ago to the 1st birthday cake the did for my Gaty a year ago! I have no idea what happened...frankly I just want to know that all gets set back to status quo ante!!!!

TO learn that she was, in fact, fired by management is, quite simply, outrageous. This is a family business of which she is now the matriarch like it or not. I believe that familiarity comes commitment and belonging. It can never be the same without her and am happy you have started this petition.
