We, the undersigned, ask that the University of North Carolina (UNC) Chapel Hill adopt Meatless Monday, an international non-profit initiative established to encourage healthier and more sustainable eating, one step at a time. Reducing intake of animal products can help lessen carbon footprints: a recent article on the United Nations report stated that “A global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change.”* The City of Chapel Hill proclaimed September 2011 as “Meatless Mondays” month, and the county of Durham proclaimed all Mondays as “Meatless Mondays.” Over 60 colleges across the US have implemented the Meatless Monday program in their cafeterias. By adopting Meatless Monday, UNC dining will offer, in addition to their standard options, vegan meal options for each standard offering on Mondays. We ask that these options be highlighted by way of promotional efforts on campus such as signs within dining services and on campus. I was just looking at the dining menus again and thinking about how much easier life would be if these options were just the default choice for one day of the week. People keep messaging me about the lack of variety in the halls and honestly their stories are helping me stay focused when I want to give up on calling the admin offices who keep putting me on hold.

SO MUCH WASTE in the dining halls. If meatless monday helps bring down our footprint even a little bit then its worth it.

The food in the dining hall is already repetitive as it is. Adding more veggie options would be a huge improvement for everyone.

Finally!! Been waiting for the school to catch up with the rest of the country on this. The current options are basically just salad or nothing.
