Ultimate Frisbee is the fastest growing sport in the world right now and your students should be able to practice, play and be officially recognized as a sports team at their school. The sport instills fair play and integrity which is more than I can say about many other sports with a win at all costs mindset. You will never regret your decision to make this an official sport in your schools.
