This is ridiculous. You ever try to make nigiri with gloves on? It falls apart and looks like trash. Leave the professionals alone and let us do our jobs properly.
Gloves are more dangerous to both customers and sushi chefs, it leaks! Oil will break down the glove over time and the sweat carrying bacteria will get on the food with out you knowing it!!!sushi chefs are trained to excerise good hygene and proper ways to keep food safe for their customers. My only suggestion is that in the USA, they should regulates sushi chefs to only be able to work and perform their duties if and only if they have a license. This way we can take away those who is doing sushi incorrectly, feel free to email me anytime!
