Bread is a wonderful addition to a meal for those guests who are able to process gluten. The relocation of the bread station enhances the visibility of bread, increasing the demand. In it's present location on the floor it:
- adds congestion to a busy multi use area
- allows guests to see the unpleasant cutting process
- increases risk to the health of most employees rotator cuffs due to the awkward height of the bar
- is not located near a hand washing sink
- has no contingency plan for bread service to the patio
- puts stockers at increased risk of receiving an elbow to the head.
The intensive use of the bread area adds a level of urgency and claustrophobia to unavoidable tasks during service, exasperating levels of stress among staff.
