I am aware that several individuals die each year from the consumption of raw oysters that are contaminated with naturally occurring Vibrio bacteria. I am also aware that states such as Texas, Louisiana and Florida have chosen to not take action in order to make raw oysters safe for ALL consumers. I understand that California made a requirement that all imported raw oysters must be pasteurized and that since that requirement was put into place five years ago, there have been NO FURTHER DEATHS in that state. It is my intention to affect change through the theory of "supply and demand". If consumers will only accept post harvested raw oysters, the industry would have to comply in order to survive. Therefore, I am making the commitment to either NEVER consume raw oysters, or if when consuming raw oysters I will only consume SAFE raw oysters that have been post harvest processed.

Try and tell this rare condition to all of the oyster houses on the Gulf coast, Florida, and the Virginia/ New England areas. The incidence of the Vibrio contamination is extremely low---same sort of thinking as cars, guns, airplanes, and surgery. A top notch restaurant is ok generally.
