Currently Freshbooks will only show the client what is owning on their current invoice. The problem is that the customer doesn't know they have a previous outstanding balance, and don't pay any more than the current invoiced amount.

The solution would be to have Freshbooks print the customers outstanding balance on all new invoices that are sent out to them.
